      This product is an additive in gel form which functions as an emulsifier and a stabilizer for sponge cakes, cake rolls and regular cakes. It reduces the need for eggs by 50%, decreases the time of preparation, which takes over an hour with conventional methods, to only 5 or 6 minutes by enabling all of the ingredients to be whipped at the same time. Products made with it are fluffier, tastier, more luxurious - looking. Shoud be used at a rate between 1% and 4%.
